Banana Chocolate Nut Ice Cream

A very good friend of mine told me that you could make ice cream from one single ingredient – bananas! I did not believe her, so I tried it. IMG_0314[1]It is truly an amazing thing – delicious ice cream without the cream!

I loved the texture and the consistency so much, that I decided to make a chocolate nut version. This is a true thing of beauty. One of your ‘five a day’, no dairy fat, no added sugar, just good fats and protein. I am always singing its praises and encouraging my friends to make it, Now, I am going to do the same to you! Hide your bananas from the kids, let them go black and get them in freezer! It is best to use black or brown bananas for this as natural sugars start developing and there is less need to use any added sugar.


Serves 2
  • 3 black bananas
  • 1.5 tbsp. cocoa or cacao powder
  • 10 walnuts
  • 1 tbsp. cashew nuts
  • 2 tsp. agave syrup (optional)

How to Make

Peel and cut your bananas and place them in a freezer bag and freeze for a minimum of 2-3 hours. I have left bananas in the freezer for 4 weeks and they were still fine. Once they are frozen, place in your food processor and whizz them up. It will resemble bread crumbs to begin with, and then the magic happens and it starts to become creamy! Tip your cocoa powder and nuts in the processor, reserving some for decoration and blend. Roughly chop the remaining nuts to add at the end. If you have a sweet tootIMG_0311[1]h add the syrup. I don’t think it needs it though. Spoon the mixture into a plastic bowl and put it back in the freezer to freeze a little more. If you can’t wait…eat it semi frozen! I sometimes do!IMG_0312[1]

Spoon it into a pretty glass, sprinkle with chopped nuts and shave 1 square of dark chocolate over your it like cascading curls. Just don’t tell anyone there is no dairy in it!
