Tomato and Mozzarella Stack

IMG_0697Such a pretty dish! Nothing new here. A classic combination that cannot be beaten. Just a different way to present it to make it even more special.

This makes a great starter as it will impress your guests and taste great!


Serves 2
  • 2 beef or large vine tomatoes
  • 125g mozzarella
  • Fresh basil
  • Balsamic glaze
  • Salt and pepper

How to Make

This is an assembly job. However it does require some skill and precision to make it look beautiful. Wash your tomatoes, then cut the bottom off each of your tomatoes using a sharp serrated knife, and eat them…waste not want not! This will ensure your stack does not topple over, which is what happened to me the first time I attempted it. Slice the rest of the tomato into four. Cut up your mozzarella into strips and tear off your basil leaves. For this recipe I am using a shop bought balsamic glaze for quickness. I will share a recipe for that at a later date.

IMG_0698Now that you have your components ready, simply layer it up one stage at a time. First layer – mozzarella, second layer, seasoning, basil and glaze. Repeat until you have used all the ingredients. To bring out the flavour of the tomato I always recommend adding a little salt to taste.

If you want to cut the stack, again using your sharp serrated knife firmly grip both ends and cut in two.

A lovely fresh starter or lunch to tickle your taste buds.
